Turnover in the food service sector remains well below pre-crisis levels

Turnover in the catering industry remains well below pre-crisis levels. Restaurants and pubs made 12.6% less turnover in September than in September 2019, adjusted for price, according to the Federal Statistical Office in Wiesbaden on Thursday. The number of employees fell by 6.7% in this period - the beverage serving sector was particularly affected with a decline of 12%.

According to the figures, pubs also suffered particularly badly in terms of turnover: their turnover in September was 34.5 percent lower than in September 2019. Compared to the same month last year, turnover was 6.2 percent lower.

"Earning opportunities also play a role in the struggle for missing staff", explained the statistics office. Employees in restaurants, bars and pubs are paid below the low-wage threshold more often than in any other sector of the economy. In October 2022, this applied to half of all employees in the sector. In the economy as a whole, the proportion was around 15 percent.

In September, the gastronomy sector as a whole experienced a turnover decrease that brought it closer to pre-crisis levels compared to September 2019. Prior to the crisis, the sector was operating at a higher turnover level.
