A new interpretation of a traditional dish - kale sushi
Sushi with kale? Fans of the winter vegetable can try this combination in Oldenburg. The menu at the Asian restaurant Moto Kitchen includes sushi combinations such as "crunchy pinkel" with pinkel and kale as well as a vegetarian version with pickled tomatoes, feta and kale. Both variations are based on seaweed leaves and rice - and kale. The roll is then deep-fried and served hot.
It only took one day to find the right combination, according to the owner of the restaurant, Stephanie Tran. Her husband Duy Hien Tran is Asian and had not had much to do with kale before. "So the biggest challenge for him was cooking the cabbage."
Oldenburg has called itself the "cabbage tour capital" for several years. Every year at the beginning of November, the kale season is heralded in with the "Hallo Grünkohl" festival. This year, the festival organizers asked whether the sushi restaurant would like to take part. This is how the idea of sushi filled with kale came about, the restaurant announced. Sales are planned until February, as long as fresh kale is available.
