This summer will be colorful in the glass. Colorful cocktails are in trend. While Aperol Spritz and Frozen Limoncello have been popular for years, it's the 90s that are making a comeback in bars. Characterful cocktails in vibrant colors, such as Sex on the Beach and Cosmopolitan, are experiencing a revival. Tomato juice with punch, better known as Bloody Mary, is also making a return to bars.

However, there are also other approaches where regionality, nostalgia, and emotion take center stage instead of artificial optics and aroma overkill. Elena Stadler is Bar Supervisor at Donnersmarkt in Vienna. The summer cocktail "The Untouchable" she conceptualized is a cocktail that represents traditional Austria. Stadler placed great value on a regional component and an Austrian ingredient in its creation. She chose the apple.

At the same time, the cocktail is a tribute to grandma's baking skills. "As a child, I loved my grandma's apple strudel, which always had a good shot of rum. That was my inspiration for the cocktail," says Stadler. She explains, "My grandma always kept a close eye to make sure no one stole a piece of strudel – that's why the drink is also called 'The Untouchable'."

The Untouchable – how to mix it

Ingredients

3 cl dark rum3 cl Frangelico3 cl Amaro Montenegro4 cl apple kombucha1 spritzer Angostura1 pinch five-spice powder, garnished with an apple peeler

Fill the glass with ice cubes. Add rum, Frangelico, Amaro Montenegro, apple kombucha, Angostura, and the spice, then stir. Garnish with an apple peeler.

Inspired by her grandmother's apple strudel and its lingering rum flavor, Elena Stadler created "The Untouchable," a regional Austrian summer cocktail that incorporates dark rum, Frangelico, and Amaro Montenegro.
