Ingredients
- 300g strawberries
- 2-3 tbsp sugar
- 250ml heavy cream
- 200g cream cheese
- 1 tbsp lemon juice
- 1 tsp agar agar (equivalent to 5 sheets of gelatin)
Instructions
- Wash, hull, and puree the strawberries.
- Mix with sugar, lemon juice, and cream cheese.
- Beat the heavy cream until it forms stiff peaks and gently fold it into the strawberry mixture.
- Dissolve the agar agar in 50ml of water over medium heat, stirring constantly for about two minutes.
- Remove 3 tbsp of the strawberry mixture and stir it into the agar agar. Then gently mix it with the remaining strawberry cream.
- Pour into dessert glasses and refrigerate for at least four hours.
