Craft - Many Thuringian communities now without a bakery
The number of bakeries in Thuringia has fallen continuously. "We have lost around a quarter of the businesses in the past six years. This is a dramatic development," said Stefan Lobenstein, President of the Thuringian Crafts Association, to the German Press Agency. Lobenstein, who himself runs a bakery and confectionery business in Erfurt, spoke of around 330 craft bakeries in Thuringia at present. This means that, on average, only every second municipality or town still has a bakery where bread, rolls and cakes are freshly baked.
Lobenstein cited an explosion in the price of baking ingredients and energy, a multitude of bureaucratic requirements, including documentation obligations, and a shortage of skilled workers in bakeries and stores as reasons for this trend. This also makes it difficult to hand over businesses. It is hardly ever the case anymore that the master baker's children take over. "That is over." Nevertheless, Lobenstein expects the bakery trade to maintain and develop further with new product and sales ideas.
