In 2023, the estimated gingerbread production amounted to 86,800 metric tonnes, with a quarter of it earmarked for export.

Produce begins in the summer to guarantee sweets reach the market on schedule. Over a third (34%) of gingerbread cookies were produced during the summer months of July to September last year.

Gingerbread isn't just a local favorite; a whopping 22,500 metric tons were shipped overseas in 2023, primarily to European nations. Nearly half of these exports ended up in Austria, Poland, and France. Approximately 10,800 tons of gingerbread cookies were imported into Germany in 2023, as per the statistics.

Other countries also benefit from this gingerbread boom. The demand for gingerbread extends beyond local boundaries, with other varieties being popular as well.
