There are many good reasons to celebrate the seasons: On the one hand, food tastes significantly better in their prime season and are at the same time cheaper, as they can be harvested in larger quantities. On the other hand, they provide the body with exactly the nutrients it needs in the respective season.

For example, garlic provides us with plenty of immune-boosting compounds during the cold season. Vitamin B and C, calcium, iron, magnesium, mangan, phosphorus, potassium, and silicon make the harvest a true nutritional bomb, capable of challenging viruses and bacteria. Recipe for a simple garlic-potato casserole with salmon

Ingredients for four portions

  • 2 garlic cloves
  • 1 kg potatoes, mainly boiling
  • 3 bunches of garlic chives
  • 500 g salmon fillet
  • 2 eggs
  • 150 ml vegetable broth
  • 100 g sour cream
  • 50 ml milk
  • 1 tbsp dill
  • 1 tbsp dried parsley
  • Salt, pepper
  • 80 g grated cheese, e.g. Emmental, Bergkäse

Preparation

  1. Heat the oven to 200 degrees top/bottom heat.
  2. Peel and finely chop the garlic cloves. Peel and cut the potatoes into thin slices. Wash and cut the garlic chives into about 0.5 cm thick slices. Rinse and pat dry the salmon, cut into pieces.
  3. Layer the garlic chives, salmon, and potatoes alternately in a casserole dish.
  4. Mix garlic, eggs, vegetable broth, milk, sour cream, dill, dried parsley, and salt and pepper.
  5. Pour over the layered vegetables.
  6. Bake in the preheated oven for about 20 minutes. Sprinkle generously with grated cheese and bake for another 20 minutes, until the cheese is golden brown.
