Breisgau region - Black Forest-based cheesecake empire expands market dominance
A man from the Black Forest has been thriving in the business of cheesecakes for years. Stefan Linders, owner of a company in Ebringen near Freiburg, produces around 8,000 to 9,000 cakes every week. "There's no stopping us," he says excitedly. The delectable cakes can now be found at various markets in southern Germany and even in multiple supermarkets. There's even an inquiry from Dubai.
The recipe for his soft and creamy cheesecakes comes from an inn in the Black Forest. The recipe was passed down by the innkeeper of his parents. When he took over the inn from them, he faithfully continued to bake the cheesecakes according to their method. Eventually, he gave up the inn but never lost the recipe.
Stefan attributes the popularity of "Stefan's Cheesecake" to its simplicity. "I don't add any baking powder to the cakes, and I never use salt in the crust," he shares. The core ingredients for the cream are cream, quark, and cooked pudding. He needs about 3,000 liters of cream each week for his cheesecakes.

The popularity of Stefan's Cheesecake has also attracted attention from people overseas, with an inquiry coming from Dubai.
