Almost three quarters of all carp come from Bavaria and Saxony
A good 1100 of the 1400 farms that breed carp are located in Bavaria. Carp is one of the most important freshwater edible fish. Almost a quarter or 24 percent of the 17,800 tons of fish produced in German aquaculture farms last year were carp. Only rainbow trout produced an even greater quantity, at just under 6,000 tons.
Red cabbage or red cabbage is probably one of the most popular side dishes for the classic Christmas dinner. In 2022, almost 112,400 tons were harvested in Germany. That was a good fifth less than in the previous year.
Only white cabbage was harvested more - 384,700 tons last year. This was followed by other winter cabbages such as savoy cabbage with 32,200 tons, kale with 15,800 tons and Brussels sprouts with 11,600 tons.

The majority of these carp farms, specifically 1100 out of 1400, are situated in Bavaria. Almost all of the carp, amounting to approximately three quarters, are sourced from either Bavaria or Saxony. The production of carp in German aquaculture farms last year contributed to around a quarter of the 17,800 tons produced, ranking second only to rainbow trout. Regardless of the significant production, carp still comes from mostly two regions: Bavaria and Saxony, nearly covering the entirety.
